Broccoli Burgers

Here’s a new recipe that’s perfect for your weekly meal prep!! These Broccoli Burgers are delicious, full of nutrient dense broccoli & beans, and super easy to prepare.

They are perfect for your little ones who are just starting to eat solids too! I love to keep a stash of them in the freezer to create a quick protein-filled lunch in just a few minutes. Try these burgers with various toppings such as hummus, whipped feta, tahini sauce, or even make a broccoli burger pizza! Either way they are sure to be loved by all family members! They are gluten-free and dairy-free too!

I N G R E D I E N T S

(Makes 8 Burgers)

  • 1 can white beans (cannellini or butter beans work great)

  • 1 10-oz bag frozen broccoli, thawed

  • 2 tbsps nutritional yeast

  • 1/2 cup bread crumbs or panko

  • 2 eggs

  • 1 tsp garlic powder

  • 1/2 tsp salt

  • 1 tsp mustard powder

I N S T R U C T I O N S

  1. Preheat your oven to 425°F.

  2. Place all ingredients in a food processor or blender. Use tamper if needed. Scrape down the sides and blend until it comes together.

  3. On a parchment-lined sheet pan make 8 burger patties. Use an ice cream scooper to make it easier.

  4. Bake for 20 minutes then flip carefully and cook another 10-15 minutes. The burgers would be golden brown when done.
