Oatmeal Pancake

Try this easy 3 ingredient Oatmeal Pancake. It’s super easy to prep ahead and is assembled in just a few minutes. Perfect for a single-serve breakfast or make a bunch and pop them in the freezer for later! Go sweet or savory with toppings, and enjoy your pancake on-the-go or at the table.

I love this recipe because you probably always have these ingredients on hand (egg, oats, & milk).

As I mentioned this recipe is perfect to make ahead during your meal prep session but also quick enough to make in the morning or night before!

I N G R E D I E N T S

  • 1/2 cup oatmeal (or 1 packet, any flavor)

  • 1 egg

  • Splash of milk (your choice)

  • Avocado or Olive Oil spray

  • Any toppings or mix-ins (optional)

D I R E C T I O N S

  1. Pour the oats in a bowl and add the egg (you can use just the white or whole, whichever you prefer).

  2. Add a splash of milk (can be flavored or plain, or soy, almond, etc.).

  3. Mix until combined.

  4. Meanwhile, heat your pan, and spray with olive or avocado oil. Pour the entire mixture into the pan to make a large pancake.

  5. Once the edges start to bubble and bottom starts to brown, flip it. Cook the other side for about 2 more minutes until fully cooked.

  6. Enjoy with any toppings you love! Add peanut butter or berries, or cottage cheese. I also love it with syrup!
