Spicy Cod Arrabbiata

Here’s a simple fish dish that uses what you probably already have in your pantry, a jar of pasta sauce.

I love anything spicy, so I like to use arrabbiata sauce, but any marinara will work! Super easy and comes together quickly!

I N G R E D I E N T S

  • 1 cup of arrabiata pasta sauce

  • Wild Cod fillets (or other flaky white fish, salmon would work too)

  • Salt & pepper

  • 1/4 cup pitted kalamata olives, halved

  • Jalapeño slices (as many as you have cod fillets)

  • 1-2 tbsp olive oil or flavored olive oil (such as garlic or basil)

  • Flat leaf parsley or cilantro, for garnish when serving

I N S T R U C T I O N S

  1. Preheat oven to 425 degrees.

  2. In a baking dish, pour the 1 cup of sauce in the bottom.

  3. Add olives to the sauce.

  4. Season fish with salt and pepper and nestle into the sauce in the dish.

  5. Top each fillet with a slice (or two) of jalapeño and drizzle each with some olive oil. (*This is where you would stop if you are prepping earlier in the day.)

  6. Place in the preheated oven and bake uncovered for about 20-30 minutes, until opaque & flaky. Depending on what fish you use and how thick it is times may vary.

  7. Garnish with parsley or cilantro.

  8. Enjoy with your veggie of choice!
