Gluten-Free Banana Berry Chia Cornbread

I N G R E D I E N T S
3 ripe bananas
2 large eggs
1/3 cup olive oil
1/3 cup coconut sugar
vanilla extract or bean paste
1 small package of raspberries or blueberries
2 tbsp chia seeds
1 single-serve yogurt (any kind or flavor)
1 tsp baking soda
1 cup coarse polenta or corn meal
3/4 cup gluten-free flour (Bob’s 1:1 Baking Flour)

large mixing bowl
brownie pan
potato masher, optional
measuring spoons & cups
rubber spatula for mixing
parchment paper, optional
I N S T R U C T I O N S
Preheat the oven to 425°.
Mash the bananas in the large mixing bowl with a fork or potato masher.
Add all the wet ingredients (including the chia seeds) in the bowl and mix to combine with the bananas.
Add the baking soda, polenta, and GF flour (or regular AP flour should work fine too) and use a spatula to combine. Do not over-mix.
Grease your baking pan or line with parchment paper, and pour batter into it. Place in the oven and bake for about 35 minutes or until a toothpick comes out of the center dry.
