Elevate your weeknight meals with this sautéed corn with miso butter recipe. Quick, flavorful, and creamy without being heavy, it’s the perfect side for any dinner.

I N G R E D I E N T S

  • 2 bags of frozen corn, thawed

  • 1 bunch scallions, sliced

  • 2 tbsps white miso paste

  • 2 tbsps butter, softened

  • a splash of soy sauce or coconut aminos

I N S T R U C T I O N S

  1. Slice the scallions, light green and white parts only, set aside.

  2. Place the pan over medium heat with the softened butter and miso paste inside.

  3. Using a fork or whisk, mash the two ingredients together. Then add the corn to the pan.

  4. Let the corn mix melt and mingle with the miso butter for about 5-7 minutes, while mixing around every so often over high heat.

  5. Sprinkle in the scallions and mix to combine. Add a splash of soy sauce or soy alternative. Taste and adjust saltiness with more soy if needed.

  6. ENJOY warm with your dinner.
