One Pan Lemon Chicken (With Artichoke Hearts & Olives)

I N G R E D I E N T S
1 package chicken drumsticks or thighs (bone-in)
2 tbsp olive oil
1/2 tsp black pepper
1/2 tsp salt
1/2 tsp garlic powder
1/2 tsp onion powder
1/2 tsp dried oregano
1/4 tsp red pepper flakes (optional)
4-6 garlic cloves, minced
4 lemons (2 1/2 juiced, 1 1/2 sliced)
8oz marinated artichoke hearts (sub 1 can or 1 bag frozen & thawed hearts)
Castelvetrano olives, pitted
Kalamata olives, pitted
Other Stuff Needed
aluminum foil
deep baking dish (lasagna pan)
I N S T R U C T I O N S
Preheat oven to 425°F
Place the chicken in a deep baking dish, like a lasagna pan.
Drizzle chicken with olive oil and sprinkle with salt, pepper, spices, garlic, and lemon juice.
Drain artichokes and olives (if needed) and add to baking dish.
Mix all ingredients in the dish with your hands until well combined.
Spread out the ingredients evenly and cover with foil. Place in the oven for about 30 minutes.
Uncover chicken and bake for another 15 minutes. Use a meat thermometer to check that the chicken has reached 165-160 degrees.
